Ahead Potato Casserole
This recipe is
expected to appear on any holiday table at the John Crum's house. John
is Barb's uncle and her father Bertram's youngest brother. John is the
youngest boy out of the nine children born to Bert and Bertha Crum.
6 to 7 medium to large potatoes
1 (6 oz.) pkg. cream cheese
1 cup sour cream (more if potatoes seem too stiff)
salt or onion salt to taste
Peel, boil, and mash potatoes.
Add cream cheese, sour cream, and salt or onion salt.
Place in container, cover and refrigerate (up to 5 days) until ready to
use .
Spoon amount needed into casserole dish, dot with butter and heat at 350
about 30 minutes.
At Christmas time chopped pimento and chopped green onions may be mixed
in before heating for a festive look.

Potato
Casserole
This recipe comes
from Nada Burton and one she has used over the years. Nada is Barb's
aunt. She is one of nine children born to Bert and Bertha Crum, Barb's
grandparents. She has lived most of her life in Kansas, not far from
where she grew up as child.
| 2 lbs Frozen hash brown
potatoes |
2 c. grated cheese |
| 1 tsp. salt |
1/2 c. bacon pieces |
| 1/2 T diced minced onion |
parsley |
| 1/2 tsp. pepper |
2 c. cornflake crumbs |
| 1 10-oz can cream of
potato, cream of celery, or cream of chicken soup |
1/2 c melted margarine |
| 2 c. sour cream |

Thaw potatoes
Mix all ingredients but cornflakes and some cheese.
Place in buttered 9x13 pan
Sprinkle with rest of cheese and cornflakes.
Bake 40-60 minutes in 350 degree oven (uncovered)
Can be refrigerated or frozen and baked when desired.

Corn
and Broccoli Casserrole
This is
another of Aunt Nada Burton's delicious casseroles.
| 1 can creamed corn |
1 stick butter or
margarine melted |
| 1 can or package frozen
whole corn |
11/2 cups Ritz cracker
crumbs (Best to use Ritz) |
| 1 package broccoli,
thawed and cut up |

Mix margarine and cracker
crumbs together.
Alternate layers of ingredients, topping with buttered crumbs.
Bake for 45 minutes at 350 degrees.
This can be frozen and baked later.
