In a
greased 1x12 inch baking dish, combine first four ingredients and 1
cup of cheese. Blend soup and 3/4 cup milk, pour over the casserole.
Bake covered at 400 for 15 minutes. Meanwhile, combine biscuit mix,
2/3 cup milk and 1/2 can French fried onions, mix thoroughly. Drop
by spoonfuls to form 6 biscuits around edge of casserole. Bake uncovered
for 15 to 20 minutes or until biscuits are golden brown. Top with
remaining cheese and onions and bake about 2-3 minutes.

Three Bean Hamburger
Casserole
This recipe
was submitted by Jeannine Crum and is a "make at least once each
winter" recipe and is a favorite of son Josh.
1 can pork and beans (1
lb.)
1 can butter beans (1 lb.)
1 can kidney beans (1 lb.)
1 lb. hamburger 1/2 c. brown sugar |
2 Tbsp. vinegar
1/4 - 1/2 lb. bacon cut into 1 inch pieces
1 medium onion, chopped
1/2 c. catsup 1/2 tsp. salt |

Preheat oven to 350. Drain
and save liquid from the 3 cans of beans. In a skillet, brown the bacon,
hamburger, and onion. Drain off grease, then combine the beans and
hamburger mixture in a greased 3 quart casserole. In a small bowl, combine
the sugar, catsup, vinegar, and salt. Pour over the bean mixture and bake
for 1 to 1 1/2 hours. If the casserole gets dry, add some of the drained
bean liquid. Note: Left overs of this casserole are great as flavors
continue to combine while waiting to be warmed over

was one of Grandma Ruth's specialties. She would fix them, we
would eat until stuffed, then later lay on the floor and die when
the dough would expand in our stomachs. When the family got
together, we would beg her to fix them. Regardless of the pain
they caused, they were a family favorite.

medium onion chopped fine
1 stick butter
1 pound hamburger
1 recipe yeast dough |
1
medium head of cabbage (shredded)
2 cups grated cheese
salt & pepper |

Brown
onion in 2 teaspoons butter add hamburger cook until done and
drain.
Steam cabbage in separate pan in butter until done.
Add hamburger to cabbage mixture and season with salt and pepper.
Roll dough out 1/4 thick and cut into 6"squares.
Place heaping tablespoon of hamburger mix on each square.
Add 1 Tablespoon grated cheese
Pull 4 corners together and pinch firmly
Place on greased pan, Bake 30 minutes at 350
Can be wrapped in foil and frozen

recipe is submitted by Darcy Sinsley. Darcy is our dear daughter-in-law.
She and our son Devon met on a church youth group skiing trip while in
high school. It was love at first sight or almost. I was surprised when
she submitted this recipe and not one for potatoes, as she can give Jim
a run for his money when it comes to eating mashed potatoes.
"This is really, really good. I got it off the internet and is enjoyed by the family as well as invasion of friends who love it too."
8 oz. manicotti noodles - cooked
15 oz. ricotta cheese
2 cups mozzarella cheese
1/2 cups parmesan cheese
10 oz. frozen spinach |
1 egg
24 oz spaghetti sauce
2 tsp. oregano
1/2 cup onion
1 lb. hamburger - cooked |

Cook the hamburger and then in a large bowl, combine all ingredients except for noodles and the spaghetti sauce.
Cook the noodles.
Spoon the mixture into noodles and place in a greased pan (9 by 13). Pour spaghetti sauce over the top of the noodles, cover with foil.
Bake for 30 minutes at 350 degrees.
Sprinkle the remaining cheese and bake for 10 more minutes longer.

Sour Cream Chicken Enchiladas

Hargrove submitted this recipe that she got from a friend while Jeff was
stationed in Guam. It's been a family favorite ever since.
Dianne is
married to Jeff Hargrove. Jeff is Jim's nephew and the only son of his
sister Maxine's five children. Jeff and Dianne lived next door to each
other as young children. Even at that early age, Dianne knew she would
one day grow up and marry Jeff. Thank goodness Jeff realized what
a prize she was and married her right out of high school.

3 1/2 cups sour cream
3 5 oz cans chicken (about 2 cups) or 1 lb fresh chicken
2 4 oz cans mushrooms (optional)
2 4 oz cans green chilies, drained |
1/3 cup onion flakes
1 tsp chili powder
1/2 tsp salt
1 tsp garlic powder
12 flour tortillas
1/3 lb cheddar cheese |
In a 13 x 9" baking pan, spread sour
cream and set aside.
In fry pan, add 1/2 cup sour cream, chopped chicken, mushrooms, green chilies, onion flakes,
chili powder, salt, and garlic powder. Cook over low heat, stirring occasionally, just until chicken
is cooked.
Preheat oven to 450. You can fry the tortillas to soften (I don't).
Place chicken mixture inside tortilla and roll. Place seam side down in sour cream pan.
Repeat. Spread enchiladas with sour cream and sprinkle with cheese.
Bake about 8 minutes or until cheese is melted

This recipe
comes from our daughter-in-law Darcy. When she was dating our son, Devon,
she fixed this one night for dinner. I think she was getting tired of
eating hamburgers. It seemed like every time she came for dinner we had
hamburgers. It has now become a family favorite.
Darcy's mom
shared this picture and family story. It seems Joyce had some errands to
run. Darcy was left with dad who was "watching" her. This was
the sight Joyce saw when she returned.
As you can tell by the
picture, Darcy began cooking at an early age.

Mix all the
ingredients together in a bowl.
Put a heaping tablespoon in the middle of an egg roll skin.
Fold and roll up to make an egg roll.
Place in hot oil (350 degrees) and fry until golden brown.
Drain, serve with soy sauce or hot mustard

one of our favorite recipes that Frank prepares to everyone's delight.
| 1 pound skinless
boneless chicken breast halves or 1 lb. skinless boneless chicken
thighs |
1 - 8 oz. can
pineapple chunks in juice, drained and juice reserved |
| 1 egg white |
½ cup sugar |
| 1 tsp water |
1/3 cup seasoned rice
vinegar |
| 2 Tbsp all-purpose
flour |
2 Tbsp dark soy sauce |
| 2 Tbsp
crushed rice crackers or 2 Tbsp cornmeal or 2 Tbsp of soft
bread crumbs |
2 tsp dark soy sauce |
| ¼ tsp salt |
| ¼ tsp baking soda |
1 clove garlic,
finely chopped |
| ¼ cup cold water |
2 medium Roma (plum)
tomatoes, cut into eighths |
| 2 Tbsp cornstarch |
1 medium green bell
pepper, cut into 1-inch pieces |
Cut chicken into ¾-inch pieces.
Mix egg white and 1 teaspoon water; toss with chicken in medium glass or
plastic bowl. Let stand 10 minutes.
Heat oven to 425 degrees
Spray nonstick cookie sheet with nonstick cooking spray.
Mix flour, crushed crackers & baking soda in medium bowl.
Remove chicken pieces from egg mixture; dip into flour mixture, turning
to coat. Place chicken on cookie sheet; spray with cooking spray about 10
seconds or until surface of chicken appears moist.
Bake 10 to 15 min., turning once, until brown and no longer pink in
center.
Mix ¼ cup cold water and the cornstarch.
Heat reserved pineapple juice, sugar, vinegar, soy sauce, garlic and salt to
boiling in nonstick wok or 12-inch skillet, stirring frequently.
Stir in cornstarch mixture; cook and stir about 1 min. or until thickened. Add
tomatoes, bell pepper and pineapple; cook and stir 1 minute.
Stir in chicken.

easy dish that was given to Barb from Jim's Aunt Gladys.
She is Jim's aunt on his mother's side of the family. When Jim was a boy, he
used to love visiting Uncle Roy and Aunt Gladys. Jim was one of their
favorites and they spoiled him rotten!

1/2 bell pepper chopped |
| 1 onion chopped |
1 can corn |
| 2 stalks of celery chopped |
1 can tomatoes |
Sauté beef, onions, celery,
and bell pepper
Add corn and tomatoes
Place in baking pan and top with bread crumbs
Bake at 350 for 30 minutes or until heated through.

recipe but added mushrooms and noodles or macaroni)
